Good Tone, Rum Ramsey-Inspired Sour Beer

Inspired by the one and only Bon Ton Cafe's classic drink, the Rum Ramsey, this lemon-lime sour drinks like a robust and flavorful cocktail and brings back all the feels of sitting down at Bon Ton Cafe, ordering a half and half fried seafood platter with Alzina Sauce, and sipping on one of the best kept secrets in NOLA.

We collabed with our friends at Roulaison and used their rum barrel oak staves in the beer, making for a complex tannic addition to this approachable sour.

We also had our buddy Matthew create a beautiful bitters simple syrup using black cardamom, gentian root, anise, clove, allspice and a few other choice spices to amp this beer up into cocktail territory.
